3 Ibs. oxtail, cut in 2 inch pieces
2 dashes cayenne pepper
3 whole allspice
2 tablespoons lard or bacon drip
1/3 cup diced celery pings
2 sprigs thyme
1/3 cup chopped onions
2 bay leaves
3 cloves garlic, chopped fine
2 tablespoons fresh parsley,chopped fine
1 bunch carrots, diced
1/2 teaspoon salt
1 tablespoon Worcestershire sauce
1/8 teaspoon black pepper
Directions
Wash the oxtail, dry it, and dust it with flour.
Melt the fat, add the oxtail, brown it, and remove it from the pan.
Put the onions and garlic and 1 tablespoon flour in the pan, and fry until these are brown.
Add the oxtail, 2 cups water, and all other ingredients, and simmer until the meat is tender 2 1/2 to 3 hours.
Our family has always liked this cooked with the ingredients listed, which produce a fine brown gravy, but, for those who prefer a tomato flavor, one whole fresh tomato may be added with the water.
