Ragout Of Kidneys Recipe

Ingredients

 
6 lamb's or 4 veal kidneys
 
1/2- Tbs. finely chopped onion
 
Salt and pepper
 
3/4 pt. stock
 
1 oz. fat
 
2 oz. mushrooms
 
3 Tbs. flour

Directions

Skin and trim the kidneys and cut in slices.
Sprinkle with salt and pepper.
Melt the fat and fry the kidneys for 5 minutes.
Remove and keep hot.
Brown the onion in the fat, add the flour, and mix well.
Cook for a few minutes and add the stock.
Stir until it boils and then add the sliced mushrooms.
Return the kidneys and cook for a few minutes longer.
