 6 ounces radishes without their tops
 1 tablespoon plus 2 teaspoons red wine vinegar
 Scallions2 Large
 1 teaspoon Dijon mustard or, if desired, mustard flavored with basil or tarragon
 3 tablespoons coarsely grated sharp cheese well packed
 Ground black pepper To Taste
 Olive oil1 Tablespoon

Directions

Trim, wash and thinly slice radishes.
Slice scallions thinly.
Combine mustard with oil and vinegar and mix well.
Stir in radish slices, onions and cheese and mix well.
Season with pepper.
