Radish And Spinach Greens Recipe
Ingredients
Tops from about 18 radishes (2 bunches), trimmed, washed, and shredded
1 cup shredded spinach leaves
1 tablespoon vegetable oil
1/2 cup plain yogurt
Salt to taste
Directions
1. Combine the radish and spinach greens.
2. Heat the oil in a heavy skillet, add the greens, and cook quickly, tossing with a pancake turner, until wilted. Reduce the heat and simmer, covered, for 5 minutes. Arrange on a hot platter.
3. Add the yogurt to the skillet. Do not heat, but stir around in the hot pan until warm. Season with the salt and pour over the greens.
