Radicchio Anchovy Salad Recipe
Ingredients
| 1 radicchio lettuce, washed and leaves separated | ||
| 1/2 bunch curly endive, washed and leaves separated | ||
| 1 witloof (chicory), washed and leaves separated | ||
| 8 radishes, washed and sliced | ||
| Chopped | 3 Tablespoon | |
| Italian flat-leaf parsley | ||
| 60 ml/2 fl oz olive oil | ||
| 60 ml/2 fl oz lemon juice | ||
| 60 ml/2 fl oz dry white wine | ||
| Garlic | 2 Clove (5gm), crushed (Dressing) | |
| 3 anchovy fillets, drained and chopped | ||
| Sugar | 1/2 Teaspoon (Dressing) | |
Directions
1. Arrange radicchio, endive and witloof (chicory) attractively on a large platter. Top with radishes and parsley.
2. To make dressing, place oil, lemon juice, wine, anchovies, garlic and sugar in a food processor or blender and process until smooth. Drizzle dressing over salad just before serving.
