Rack Of Lamb With Herbed Mustard Glaze Recipe
Ingredients
| Prepared mustard | 1/2 Cup (16 tbs) | |
| Soy sauce | 2 Tablespoon | |
| Dried rosemary | 1 Teaspoon | |
| Ground ginger | 1/4 Teaspoon | |
| Garlic | 1 Clove (5gm) | |
| Egg | 1 | |
| Olive oil | 2 Tablespoon | |
| 2 (2 pound) racks of lamb | ||
Directions
Combine first 6 ingredients in container of an electric blender; process 15 seconds or until smooth.
Add oil to mustard mixture, one drop at a time; process on low speed until light and creamy.
Place lamb, fat side up, on rack in a shallow roasting pan; insert meat thermometer, making sure it does not touch fat or bone.
Brush mustard mixture on lamb.
Bake at 325° for 1 hour and 20 to 30 minutes or until meat thermometer registers 160°.
