Rabbit Salmi Recipe
Ingredients
| 1 wild rabbit | ||
| Celery | 2/3 Cup (16 tbs), chopped | |
| Bay Leaf | 1 | |
| Margarine | 2 Tablespoon | |
| Flour | 2 Tablespoon | |
| Hot water | 2 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Worcestershire sauce | 1 Tablespoon | |
| Olives | 12 , pitted | |
| Freshly chopped parsley | ||
Directions
Place dressed rabbit in baking pan and add onion, celery and bay leaf and roast in 350°F.oven for 45 minutes.
Remove meat from pan, add margarine and flour to pan drippings and cook to rich brown.
Add hot water and stir well.
When smooth, add salt, Worcestershire sauce and olives.
Replace meat to pan; cover tightly and roast 350°F.45 minutes longer.
Place rabbit on platter and sprinkle with parsley.
