Directions
GETTING READY
1. In a large heatproof bowl, tip in the apples, quinces and water
2. Cover with cling film and microwave on HIGH for 20-22 minutes
3. Stir the mixture frequently during the cooking process to ensure that the mixture does not burn.
4. Process the mixture well in a blender
5. Set up a fine nylon sieve on top of a bowl
6. Tip the puree into the bowl
7. Allow the mixture to drip
8. Set aside the pulp for other recipes where it can be used
9. Reserve the juice
MAKING
10. In a large bowl, tip in the reserved juice
11. Measure it to ensure that you have about 175 ml (6 fl oz), to 300 ml (1/2 pint) in amount. If it is less make it up with unsweetened apple juice.
12. Add the lemon juice
13. Tip the mixture into a large heatproof dish with the sugar and stir well
14. Microwave uncovered, on HIGH for 12-14 minutes
15. The mixture is done when a teaspoonful of the hot mixture dropped on to a cold saucer forms a skin on the surface within a minute. This indicates that the mixture will set in the jars too.

16. Pour into the sterilized hot jars
17. Cover with a waxed disc
18. Seal with cellophane
19. Secure with a rubber band and label
20. Store in a dark cold place
