Ingredients

 
2 cups canned whole tomatoes
 
8 fresh basil leaves or 1/2 teaspoon dried
 
6 parsley sprigs, stems removed, or 1 teaspoon parsley flakes
 
1 tablespoon plus
 
1 teaspoon olive oil
 
1 tablespoon chopped onion
 
1/2 teaspoon salt
 
1 small garlic clove
 
Dash each oregano leaves and freshly ground pepper

Directions

In blender container combine all ingredients and process until smooth; pour into 1-quart saucepan and bring to a boil.
Reduce heat, cover, and let simmer for 10 minutes.
Variation: If blender is not available, this sauce can be totally prepared in a saucepan.
Use canned crushed tomatoes and mince the basil, parsley, and garlic.
In saucepan heat oil; add onion and garlic and saute briefly (do not brown).
Add tomatoes and bring to a boil.
Reduce heat and stir in remaining ingredients; let simmer for 10 to 15 minutes.
