Yeast-2 packages
 
Water-3/4 cup, warm
 
Buttermilk-1 1/4 cups
 
All-purpose flour-5 cups (about)
 
Shortening-1/4 cup
 
Sugar-2 tablespoons
 
Baking powder-2 teaspoons
 
Salt-2 teaspoons
 
Butter-to brush, soft

Directions

MAKING
1)Take a large electric mixer bowl and dissolve yeast in warm water.
2)Fold in buttermilk, 2 1/2 cups flour, shortening, sugar, baking powder and salt.
3)Mix for 30 seconds at low speed of mixer. Scrap side and bottom of bowl.
4)Then, beat for 2 minutes at medium speed.
5)Add remaining flour by hand. Knead into soft and slightly sticky dough.
6)On heavily floured board, knead the dough well.
7)Now, roll it into 18 x 9-inch rectangle. Roll up from short side as for jelly roll and press each end to seal. Fold ends under loaf.
8)Take a greased bread pan and put the seam side down. Brush loaf lightly with butter.
9)Leave to rise for an hour or until doubled in bulk.
10)Bake at 375 degrees for 45 minutes or until done.

SERVING
11)Serve the quick rise bread sliced for dinner.
