Ingredients

 
1 teaspoon sugar
 
1/2 cup warm water
 
1 envelope dry yeast
 
1/2 cup boiling water
 
1/2 cup rolled oats
 
1/4 cup fancy molasses or honey
 
2 tablespoons soft shortening
 
1 1/2 teaspoons salt
 
1 egg
 
2 3/4 cups all-purpose flour

Directions

Add sugar to warm water, and sprinkle yeast over; let stand 10 minutes.
Mix boiling water, oats, molasses, shortening and salt in large mixing bowl, and let mixture cool to lukewarm.
Add yeast mixture, egg and 1 1/2 cups flour to lukewarm mixture.
Beat 2 minutes in electric mixer at medium speed or 300 strokes by hand.
Scrape sides and bottom of bowl frequently.
Add remaining flour, and blend with mixing spoon until smooth.
Spread batter evenly in greased 9" x 5" x 3". loaf pan.
Smooth top of loaf with floured hands, and pat into shape.
Let rise in warm place (85 °F.) until batter is 1 inch from top of pan, about 1 1/2 hours.
Bake at 375°F. 50—55 minutes.
Crust will be dark brown.
To test, tap bottom crust; it should sound hollow.
After removing from pan, brush top with melted butter or margarine.
Makes 1 loaf.
