Ingredients

 
1 package lemon pudding or pie mix
 
1/2 cup sugar
 
2 1/2 cups water
 
2 eggs, separated
 
6 large or 12 small baked tart shells
 
1/4 cup sugar

Directions

Combine lemon pudding, sugar and water in a saucepan.
Beat yolks slightly and add to mixture.
Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
Cool slightly.
Pour into baked tart shells.
Beat egg whites until stiff but not dry; gradually beat in sugar until mixture stands in peaks.
Pile lightly on tarts.
Bake in a hot oven (425° F) about 5 minutes until lightly browned.
Makes 6 large or 12 small tarts.
