Quick Hollandaise Sauce Recipe
Ingredients
1/2 cup (one stick) butter
3 egg yolks
1 tablespoon lemon juice, or to taste
1/4 teaspoon salt
Pinch of cayenne
Directions
Heat the butter to bubbling in a small saucepan.
Place the egg yolks, lemon juice, salt and cayenne in the container of an electric blender.
Cover and turn the motor on low speed.
Immediately remove the cover and pour in the hot butter in a steady stream.
When all the butter is added, turn off the motor.

The recipe worked great. This was the first Hollandaise sauce that turned out good for me! This amt is good for 4 servings no problem.
I made the following mods: 1/2 lemon squeezed , Paprika for Cayenne, and since I don't have a blender - used my milkshake maker. Good to mix the sauce last so it stays warm. Thanks
