Quick Gazpacho Recipe

Ingredients
6 large ripe tomatoes, peeled and diced
1/2panish onion or 3 spring onions, chopped
1 green pepper, seeded and diced
1 cucumber, thinly peeled and diced
2 cloves garlic, crushed
1 tablespoon wine vinegar
2 tablespoons olive oil
1 x 425 ml can tomato juice
1 x 425g can beef or chicken consomme
Salt and freshly ground pepper
Ice cubes
2 tablespoons chopped parsley
Directions
Place vegetables and garlic in a bowl, add vinegar and oil and toss very gently with 2 wooden spoons. Add tomato juice and consomme, then season to taste with salt and pepper. Put a few ice cubes into 8 individual bowls, ladle gazpacho over. Sprinkle with parsley. Serve with fresh crusty bread or with a bowl of lightly salted garlic croutons, made by frying squares of bread in oil flavored with a clove or two of crushed garlic
