Ingredients

 Ripe tomatoes6 Large (Peeled)
 Spanish onion/3 spring onions, chopped1⁄2
 Green pepper1 , seeded and diced
 Cucumber1 , thinly peeled and diced
 Garlic2 Clove (10 gm), crushed
 Wine vinegar1 Tablespoon
 Olive oil2 Tablespoon
 Canned tomato juice425 Milliliter (1 Can)
 Canned beef/Chicken consomme425 Gram
 Ground pepper To Taste
 Ice cubes1 Cup (16 tbs)
 Chopped parsley2 Tablespoon
 Salt To Taste

Directions

Place vegetables and garlic in a bowl, add vinegar and oil and toss very gently with 2 wooden spoons. Add tomato juice and consomme, then season to taste with salt and pepper. Put a few ice cubes into 8 individual bowls, ladle gazpacho over. Sprinkle with parsley. Serve with fresh crusty bread or with a bowl of lightly salted garlic croutons, made by frying squares of bread in oil flavored with a clove or two of crushed garlic
