Quick Gazpacho Recipe

Ingredients
| Ripe tomatoes | 6 Large (Peeled) | |
| Spanish onion/3 spring onions, chopped | 1⁄2 | |
| Green pepper | 1 , seeded and diced | |
| Cucumber | 1 , thinly peeled and diced | |
| Garlic | 2 Clove (10 gm), crushed | |
| Wine vinegar | 1 Tablespoon | |
| Olive oil | 2 Tablespoon | |
| Canned tomato juice | 425 Milliliter (1 Can) | |
| Canned beef/Chicken consomme | 425 Gram | |
| Ground pepper | To Taste | |
| Ice cubes | 1 Cup (16 tbs) | |
| Chopped parsley | 2 Tablespoon | |
| Salt | To Taste |
Directions
Place vegetables and garlic in a bowl, add vinegar and oil and toss very gently with 2 wooden spoons. Add tomato juice and consomme, then season to taste with salt and pepper. Put a few ice cubes into 8 individual bowls, ladle gazpacho over. Sprinkle with parsley. Serve with fresh crusty bread or with a bowl of lightly salted garlic croutons, made by frying squares of bread in oil flavored with a clove or two of crushed garlic
