Quick Chicken Tortellini Soup Recipe
Ingredients
3 garlic cloves, chopped
2 tablespoons olive oil
8 cups chicken broth
1 teaspoon Italian seasoning
1 pound chicken tortellini
10 ounces fresh spinach, thinly sliced (about 6 cups)
1/4 cup grated parmesan cheese
Directions
1. In a large saucepan, cook garlic in olive oil over medium heat until fragrant, 1 to 2 minutes. Add chicken broth and Italian seasoning; bring to a boil over high heat. Add tortellini, reduce heat to medium, and simmer, partially covered, until pasta is tender but still firm, about 10 minutes.
2. Add spinach and simmer until wilted, about 2 minutes. Stir in cheese and season with pepper to taste. Serve at once.
