Ingredients

 
For the burger:
 
Sprouted grain bread
 
Boca burger or your burger
 
Low fat or soy cheese
 
Store bought pesto
 
Sliced tomato
 
For the tofu salad and sandwich:
 
¼ of a firm tofu brick
 
½ tbsp soy or low fat mayonnaise
 
Dash of spike seasoning
 
1 tsp Dijon mustard
 
Low fat or soy cheese
 
Sprouted grain bread
 
Chopped greens of choice

Directions

For the burger:
Cook you favorite frozen veggie burger in a skillet on medium heat for 4 minutes on each side.
Add the low fat cheese or soy cheese just before the last 2 minutes and cook.
Add the burger on the bread and spread the pesto on it.
Top with the tomato slices and you have the open face veggie burger.

For the tofu salad and sandwich:
Mix the tofu and mayonnaise together in a bowl.
Add the spike seasoning. Mix.
Add the Dijon mustard. Mix.
Spread the tofu mix on a piece of bread generously.
Add on some chopped greens.
Top with a slice of cheese.
