Quick And Easy Fresh Corn Relish Recipe
Ingredients
1 green pepper, diced
4 to 5 celery stalks, diced
3 tbsp (50 mL) water
2 large onions, chopped fine
3 to 4 cups (750 mL to 1 L) corn cut from cooked or uncooked ears of corn
1/4 cup (60 mL) sugar
1 tbsp (15 mL) salt
1 tbsp (15 mL) mustard seeds
1/2 cup (125 mL) white or cider vinegar
1/2 cup (125 mL) water
Directions
Place in an 8-cup (2 L) microwave-safe dish the green pepper, celery and the 3 tablespoons (50 mL) of water.
Stir.
Cover and microwave at HIGH 2 minutes.
Add the onions and corn.
Microwave at MEDIUM 2 minutes.
Add the remaining ingredients, stir until well mixed.
Microwave at MEDIUM 3 minutes.
Stir well.
Pour into a jar.
Keep refrigerated.
Serve cold.
Stir.
Cover and microwave at HIGH 2 minutes.
