1 tbsp (15 ml) butter
 
1 medium onion, chopped
 
1 garlic clove, smashed and chopped
 
3 slices bacon, diced
 
1 lb (500 g) fresh okra, ends snipped
 
4 tomatoes, peeled, seeded and chopped
 
1 green pepper, diced
 
1 tsp (5 ml) chopped jalapeno pepper
 
1 tbsp (15 ml) curry powder
 
1 tbsp (15 ml) cumin powder
 
1 tsp (5 ml) olive oil
 
Salt and pepper

Directions

Microwave butter 1 minute in casserole uncovered.
Add onion, garlic and bacon; cover and microwave 6 minutes.
Add okra and mix; microwave 2 minutes covered.
Stir in tomatoes, green pepper, jalapeno, seasonings and oil; cover and microwave 7 minutes.
Mix well; finish micro waving 8 minutes covered.
Sprinkle with cheese if desired.
