Quick Two-Tomato Sauce With Nicoise Olives Recipe

I always jokingly say that Quick Two-Tomato Sauce With Nicoise Olives is my soul's food. I heard my kid quote the same about Quick Two-Tomato Sauce With Nicoise Olives the other day. Enjoy cooking!

Ingredients

 
2 tbs (30 ml) Super Canola Oil
 
1 medium yellow onion, minced
 
4 cups (960 ml) Organic Diced Tomatoes or ripe garden tomatoes, peeled, seeded and diced
 
1/3 cup (80 ml) dried tomatoes, chopped
 
4 cloves garlic, minced
 
1/2 cup (120 ml) Nicoise olives, pitted
 
3 tbs (45 ml) fresh parsley, chopped
 
3 tbs (45 ml) fresh basil, chopped
 
3 tbs (45 ml) California
 
Extra Virgin Olive Oil
 
2 tbs (30 ml) Organic
 
Red Wine Vinegar
 
Salt, to taste
 
Fresh ground pepper, to taste

Directions

Heat the canola oil in a 2- or 3-quart saucepan over medium heat.
Add the onions and saute for 5 minutes.
Add the diced tomatoes, the dried tomatoes and garlic.
Simmer for 15 minutes.
Add the olives and continue to simmer until all of the juice from the tomatoes has evaporated.
Stir in the parsley and basil.
Simmer 5 more minutes.
Stir in the olive oil and vinegar.
Simmer for 5 more minutes, stirring often.
Season with salt and fresh ground pepper.
