Quick Turkey Chili Recipe
Ingredients
2 teaspoons olive oil
1 medium-size yellow onion, finely chopped
1 large sweet green pepper, cored, seeded, and diced
1 pound ground turkey
2 teaspoons each ground cumin and chili powder
1/4 teaspoon salt
2 cloves garlic, minced
1 can (14 1/2 ounces) low-sodium tomatoes, chopped, with their juice
1/2 teaspoon each dried basil and oregano, crumbled
1 1/2 cups cooked red kidney beans
1 tablespoon minced fresh cilantro (coriander) (optional garnish)
Directions
1 In a 12-inch nonstick skillet, heat the oil over moderate I heat.
Add the onion and green pepper and saute, stirring occasionally, for 5 minutes or until the onion is softened.
Add the turkey and saute for 3 minutes or until no longer pink.
Add the cumin, chili powder, salt, and garlic and saute, stirring, 1 minute more.
Stir in the tomatoes, basil, and oregano and lower the heat.
Simmer, stirring occasionally, for 20 minutes.
Stir in the beans and simmer 5 to 7 minutes more or until the beans are heated through.
Garnish with the cilantro if desired.
