Quick Tomato Vichyssoise Recipe
Ingredients
| 2 2/3 oz pkg. cream of leek soup mix | ||
| Water | 2 Cup (16 tbs) | |
| 6 ripe tomatoes, peeled and chopped | ||
| Buttermilk | 2 Cup (16 tbs) | |
| Salt | To Taste | |
| Chopped fresh dill | ||
Directions
Combine soup mix and water in heavy saucepan.
Bring to a boil, stirring constantly.
Add chopped tomatoes and cover tightly.
Simmer 15 minutes or until tomatoes are broken up, stirring occasionally.
Remove from heat and press soup mixture through a sieve or food mill or buzz in a blender.
Chill.
Add buttermilk and salt to taste.
