Quick Supper Risotto Recipe
Ingredients
| Long-grain rice - 6 oz | ||
| Butter | 2 Ounce | |
| Onion | 1 | |
| Tomatoes | 2 | |
| Pepper red | 1 To taste | |
| Green pepper | 1 To taste | |
| Rashers | 8 Ounce, diced | |
| Cheese | 3 Ounce, grated | |
| Salt | 1 To taste | |
| Pepper | To Taste | |
| Green salad - as required, to serve | ||
Directions
MAKING
1) In a pan, cook the rice in boiling salted water for 10 minutes.
2) In a skillet, saute the onion in butter until soft and transparent.
3) Stir in the sliced tomatoes, peppers, ham (or rashers) and cook over a low heat for few minutes.
4) Drain the rice and stir into the ham mixture in the skillet; mix thoroughly.
SERVING
5) Sprinkle the Supper Risotto with a little grated cheese and serve immediately with the rest of the cheese and a crisp green salad.
