Quick Summer Casserole Recipe
Ingredients
| 1 cup cooked chicken or chunk' style tuna cut up | ||
| Cooked ham | 1 Cup (16 tbs) | |
| 1 1/2 cups cooked macaroni or spaghetti | ||
| Butter/Margarine | 2 Tablespoon | |
| Sliced mushrooms | 3 Ounce, drained | |
| 4 minced scallions (green onions) or 2 minced shallots | ||
| 1/2 cup light cream or evaporated milk | ||
| Parsley | 1 Tablespoon, minced | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 1/2 cup bread or corn-flake crumbs | ||
| Sharp cheddar cheese | 1/4 Cup (16 tbs), grated | |
Directions
1.
Melt the butter in a saucepan and lightly saute the mushrooms and scallions.
2.
Stir in the chicken or tuna, ham, macaroni or spaghetti, cream, parsley, and salt and pepper to taste.
Add some of the mushroom liquid if it seems a bit dry.
3.
Pour the mixture into a medium casserole and top with the crumbs and cheese mixed.
4.
Bake 15 minutes in a 325° oven and then put under the broiler a moment to brown the top.
