Quick Strawberry Jam Recipe
Ingredients
4 cups fresh strawberries
1 cup honey
2 tablespoons lemon juice
1 envelope unfavored gelatin
Directions
Quarter strawberries. (If berries are small halve them.) In a medium-size saucepan, cover berries with honey.
Pour lemon juice into a cup, sprinkle gelatin on top, and stir.
Then add to strawberries and honey.
Cook over low heat, stirring constantly, until honey takes on a pink color.
Increase heat to medium and bring to a boil, stirring constantly.
Allow to boil without stirring for 30 minutes.
Remove from heat and cool. (Jam will thicken as it cools.) Pour into a sterilized jar, and refrigerate.
