Yelloweye Steuben Beans With Rice Recipe

Ingredients
1/2 cup (120 ml) chopped scallions or onions
1/3 cup (80 ml) chopped celery
1/2 cup (120 ml) chopped green pepper
2 cloves minced garlic
3 tbs (45 ml) cooking oil
2-3 cups (480-720 ml) cooked Steuben Yellow Eye Beans
1/2 cup (120 ml) organic tomato puree
1/2 tsp (3 ml) dry basil salt, to taste pepper, to taste
1/4 cup (60 ml) grated carrots
2 cups (480 ml) cooked brown rice, optional
Directions
Saute scallions, celery, green pepper and garlic in oil for 1-2 minutes, to soften.
Add beans and stir-fry for a minute or 2 more, then add tomato puree, basil, salt and pepper.
Continue to cook over medium heat, stirring frequently, for about 10 minutes.
Correct seasoning.
Place in serving dish and garnish with grated carrots.
