Quick Sauce Bordelaise Recipe
Ingredients
| Onions | 2 Small | |
| 6 mushrooms butter | ||
| 1 1/2 gills dry white wine | ||
| 1 1/2 gills stock | ||
| 1 tablespoon tomato puree or paste | ||
| Salt, pepper | ||
Directions
Chop onions very finely, slice mushrooms.
Saute in a little butter until lightly browned.
Add wine and stock and simmer until reduced to 1/2 pint of liquid.
Stir in tomato puree or paste; season to taste.
