Quick Quesadillas Recipe
Ingredients
| 1/4 cup each shredded Cheddar and jack cheese | ||
| 1 flour tortilla (about 8-inch size) | ||
| 1 slice mild red onion, separated into rings (optional) | ||
| 1 tablespoon chopped, seeded, canned | ||
| Parmesan cheese | 2 Teaspoon, grated | |
| Butter/Margarine | 2 Teaspoon, melted | |
Directions
Distribute Cheddar and jack cheese over half the tortilla to within 1/2 inch of edge; add onion and green chile, if used.
Sprinkle with Parmesan, if desired.
Fold tortilla over and brush top with melted butter.
Turn over onto a baking sheet and brush second side with butter.
Broil about 3 inches from heat until top is lightly browned (about 2 minutes).
Turn over and broil until other side is browned and cheese is melted (about 2 more minutes).
