Put the pineapple, juice from can, sugar and egg yolks in a basin over hot water, beat together for about 5-10 minutes until creamy.
Leave to cool.
Add dissolved gelatine, then fold in stiffly beaten egg whites.
Put into fruit glasses and decorate with cherries and angelica.
