Quick Peach Oat Muffins Recipe
Ingredients
2 c. whole wheat flour
1 c. rolled oats
1/2 c. Miller's bran
1/2 c. packed brown sugar
1 1/2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 tsp. salt
3 fresh peaches, finely chopped
1 1/8 c. buttermilk
2 eggs
1/4 c. vegetable oil
1 Tbsp. finely grated orange peel
Directions
Preheat oven to 400°.
In large bowl, combine dry ingredients.
Add remaining ingredients and stir until moistened and just blended.
Divide batter among 20 greased muffin cups.
Bake for 20 minutes or until inserted toothpick comes out clean.
