Quick Parsnip Chowder Recipe

Ingredients

 
1 slice lean bacon, diced
 
1 small parsnip, lightly scraped and diced
 
1 small new red potato, scrubbed and diced
 
2 tablespoons chopped onion
 
2 to 3 tablespoons stock
 
1 cup low-fat milk, milk and/or half-and-half cream
 
Salt and white pepper to taste
 
Minced fresh parsley
 
Paprika

Directions

Cook bacon until crisp.
Remove with slotted spoon and set aside.
Brown parsnip, potato and onion in bacon drippings, add stock, cover tightly and cook gently until vegetables are just tender.
Add milk, heat without boiling and adjust seasonings with salt and pepper.
Garnish with reserved bacon, parsley and paprika.
