Ingredients

 
1 tablespoon margarine
 
1 cup coarsely chopped green or red bell pepper
 
1 cup chopped onion
 
3 1/2 cups (16 ounce package) frozen whole kernel corn
 
1 cup chicken broth
 
4 ounces (3/4 cup) cooked, lean ham (95% fat free), cubed
 
1/2 teaspoon ground cumin
 
1/4 teaspoon ground white pepper
 
3 cups (two 12 ounce cans) undiluted CARNATION® Evaporated Lowfat Milk, divided
 
1/3 cup plus 1 tablespoon all purpose flour

Directions

In large saucepan, melt margarine; cook and stir bell pepper and onion over medium heat for 5 minutes or until tender.
Stir in corn, broth, ham, cumin and white pepper.
Cook for an additional 5 minutes, stirring occasionally, until corn is cooked.
Pour 1/2 cup evaporated lowfat milk into medium bowl; whisk in flour until well blended.
Add remaining 2 1/2 cups evaporated lowfat milk; mix well.
Slowly pour into saucepan.
Increase heat to medium-high; cook, stirring constantly, for 5 minutes until mixture comes to a boil and thickens slightly.
Boil for 1 minute.
Garnish as desired.
