Quick Lime Rum Pie Recipe
Ingredients
| 2 14-ounce cans sweetened condensed milk | ||
| Egg yolks | 4 | |
| Juice and grated rind of 2 fresh limes | ||
| Light rum | 1/3 Cup (16 tbs) | |
| 1 baked 9-inch pie shell or graham cracker crust | ||
| Lightly sweetened whipped cream | ||
Directions
Pour condensed milk into deep bowl.
Add egg yolks and stir well with a fork, hand-beater or blender.
Add lime juice, rind and rum; stir well.
Pour into pie shell and refrigerate until ready to serve.
Just before serving, spread pie with a thin layer of whipped cream.
