Quick Herb Topped Fillets Recipe
Ingredients
1/4 cup olive oil 50 ml
1 sweet red pepper, seeded and chopped 1
4 green onions, chopped 4
1 tsp dried oregano 5 ml
1/4 cup chopped fresh parsley 50 ml
1 Tb drained capers 15 ml
1/4 tsp pepper 1 ml
4 fish fillets 4
Directions
In medium skillet, heat oil over medium high heat.
Add red pepper, onions and oregano; cook over medium heat 2 to 3 minutes, stirring often, until pepper is just tender.
Stir in parsley, capers and pepper; set aside and keep warm.
Place fish fillets on oiled barbecue grill; grill over medium high heat 6 to 8 minutes, turning carefully once, until fish flakes easily with a fork.
