Ingredients

 Cucumber1/3 Cup (16 tbs), chopped
 1/4 cup finely chopped mild red or white onion
 Avocado1 Small, peeled
 Oregano leaves1/4 Teaspoon, crumbled
 1 1/2 tablespoons olive oil or salad oil
 Wine vinegar1 Tablespoon
 Tomato juice2 Cup (16 tbs)
 Lime wedges
 Salt To Taste
 Pepper To Taste

Directions

In a serving bowl or pitcher, combine cucumber, onion, avocado, oregano, oil, and vinegar.
Pour in tomato juice.
Cover and chill thoroughly.
Add salt and pepper to taste.
Add ice cubes to individual servings, if you wish.
Pass lime wedges to squeeze over.
