Quick Gazpacho Recipe
Ingredients
| Cucumber | 1/3 Cup (16 tbs), chopped | |
| 1/4 cup finely chopped mild red or white onion | ||
| Avocado | 1 Small, peeled | |
| Oregano leaves | 1/4 Teaspoon, crumbled | |
| 1 1/2 tablespoons olive oil or salad oil | ||
| Wine vinegar | 1 Tablespoon | |
| Tomato juice | 2 Cup (16 tbs) | |
| Lime wedges | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a serving bowl or pitcher, combine cucumber, onion, avocado, oregano, oil, and vinegar.
Pour in tomato juice.
Cover and chill thoroughly.
Add salt and pepper to taste.
Add ice cubes to individual servings, if you wish.
Pass lime wedges to squeeze over.
