Quick Frozen Strawberry Souffle Recipe

4 cups fresh strawberries
 
1/3 cup honey, or to taste
 
1 envelope uhflavored gelatin
 
2 tablespoons cold water
 
1 1/2 cups heavy cream

Directions

Construct a collar for a 1-quart souffle dish.
Set aside a few pretty berries for decoration.
Puree the rest in a blender, adding honey.
Sprinkle gelatin over cold water in a cup, and set aside to soften for 5 minutes.
In a small saucepan, combine gelatin with 1/2 cup puree, stirring over low heat until gelatin is completely dissolved.
In a large bowl, combine gelatin mixture with remaining puree.
Whip cream until soft peaks form.
Fold cream into puree.
Spoon mixture into prepared souffle dish, and freeze until firm.
