Ingredients

 Boiled potatoes2 Small, peeled
 Red onion1 Small, sauteed
 2 eggs, hard-cooked and sliced
 Mushrooms1/2 Cup (16 tbs), sauteed
 Salt To Taste
 Pepper To Taste

Directions

In the bottom of a nonstick skillet, layer the potatoes, onion, eggs, and then the mushrooms.
Season with salt and pepper to taste.
Add a small amount of water.
Cover and simmer over low heat until heated.
Lift out of skillet with a slotted spatula.
