Ingredients

 
Minced Pork – 2 tablespoons
 
Garlic- 1 clove, grated
 
Shrimps – 1/2 cup, chopped
 
Chives- a small bunch, blanched
 
Spring Onions - a small bunch, chopped
 
Egg Roll Wrapper – 4
 
For Dipping Sauce:
 
Brown Sugar – 1 tablespoon
 
Crushed Pineapple - 1 tablespoon
 
Wine Vinegar – 1 tablespoon
 
Oil

Directions

MAKING
1. Heat a wok and add 1 tablespoon of oil in it.
2. Add minced pork into the wok and stir well using chop sticks.
3. Fry for a couple of minutes then add grated garlic into it.
4. Add chopped shrimps and stir the ingredients using spoon.
5. Mix chopped chives and spring onions into the mixture and stir again. Take off heat and let cool slightly.
6. Place the egg roll wrappers on a flat surface.
7. Spoon the meat and shrimp mixture in the center of each.
8. Brush some water at the edges across the baseline.
9. Cross the points right over the mixture and join.
10. Tuck the other joint in and roll neatly.

FINALIZING
11. In a wok heat oil for deep frying at 375 degrees F. Add the rolls and fry on all sides.
12. Drain out the rolls from the wok.
13. To prepare homemade duck sauce, in a small bowl add a tablespoon of brown sugar and crushed pineapple in 1:1 ratio.
14. Mix a tablespoon of wine vinegar with it.

SERVING
15. Serve the rolls together with dipping sauce.
