Quick Curried Lentils Recipe
Ingredients
| Vegetable oil | 1 Tablespoon | |
| Onion | 1 Medium, chopped | |
| Garlic | 3 Clove (5gm), finely chopped | |
| Ground ginger | 1 Tablespoon, minced | |
| Ground cumin | 2 Teaspoon | |
| Ground coriander | 1 Teaspoon | |
| 1 cup green lentils, washed and sorted | ||
| Tomatoes | 1 Can (10oz), chopped | |
| 1 1/2 cups vegetable stock or chicken stock | ||
| 1/3 cup chopped fresh coriander or parsley | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. In a large saucepan, heat oil over medium heat. Add onion, garlic, ginger, cumin and coriander; cook, stirring, for 3 minutes or until softened.
2. Add lentils, tomatoes and stock. Bring to a boil; reduce heat, cover and simmer for 35 minutes or until lentils are tender. Stir in coriander; season with salt and pepper to taste.`
