Ingredients
1 cup each baking mix and yellow cornmeal
3 teaspoons baking powder
2 eggs
1 cup milk
1/3 cup honey
4 tablespoons butter or margarine, melted and cooled
Directions
In a large bowl, stir together baking mix, cornmeal, and baking powder.
In a small bowl, beat eggs lightly; stir in milk, honey, and butter.
Pour egg mixture into dry ingredients and mix just until moistened.
Turn batter into a well greased 8 inch square or round baking pan.
Bake in a 400° oven for 25 to 30 minutes or until a wood skewer inserted in center comes out clean.
Cut into squares or wedges and serve warm.
