MAKING
1) Drain and rinse the canned chick peas
2) In a large bowl add the chick pea, lentil, diced peppers, chopped jalapenos pepper and mix well
3) Then add the dried cranberries, the apricots and orange zest and mix in
4) To make the dressing, in a small bowl pour in the oil
5) Add in the lemon juice, cumin, ground coriander, cayenne pepper and pepper
6) Pour in the dressing and toss the salad well

SERVING
7) Top the salad with some toasted slivered almonds
