Ingredients
1 (10-ounce) can chunk white chicken in water, drained and flaked
1 1/2 cups fat-free cottage cheese
2 tablespoons seeded chopped jalapeno pepper
8 (8-inch) fat-free flour tortillas
3/4 cup (3 ounces) shredded reduced-fat Monterey Jack cheese
2/3 cup sliced green onions
1 cup chunky salsa
Cilantro sprigs (optional)
Directions
1. Preheat oven to 350°.
2. Combine first 3 ingredients in a bowl; stir well. Place 4 tortillas on an ungreased baking sheet; spoon chicken mixture evenly over each tortilla. Sprinkle cheese and green onions evenly over chicken mixture; top with remaining 4 tortillas.
3. Bake at 350° for 8 minutes or until warm. Cut each quesadilla into 6 wedges. Serve immediately with salsa. Garnish with cilantro sprigs, if desired.
