Quick Cheese Soup Recipe
Ingredients
| Onions | 2 Small, thinly sliced | |
| Butter | 1 1/2 Ounce | |
| Plain flour | 1 1/2 Ounce | |
| Milk | 1 Pint | |
| 1/2 pint white stock or water | ||
| Salt | 1/2 Teaspoon (Leveled) | |
| Pinch cayenne pepper and grated nutmeg | ||
| Cheddar Cheese | 6 Ounce, diced | |
| Crisp toast or croutons | ||
Directions
Cook the onions in the butter for a few minutes, without browning.
Add the flour and stir over a low heat for a further minute.
Add the milk and stock or water gradually, and stir until boiling.
Season, and simmer gently for 5 minutes.
Mix in the cheese and reheat without boiling until it has melted.
Serve hot with crisp toast or croutons.
