Ingredients

 Onions2 Small, thinly sliced
 Butter1 1/2 Ounce
 Plain flour1 1/2 Ounce
 Milk1 Pint
 1/2 pint white stock or water
 Salt1/2 Teaspoon (Leveled)
 Pinch cayenne pepper and grated nutmeg
 Cheddar Cheese6 Ounce, diced
 Crisp toast or croutons

Directions

Cook the onions in the butter for a few minutes, without browning.
Add the flour and stir over a low heat for a further minute.
Add the milk and stock or water gradually, and stir until boiling.
Season, and simmer gently for 5 minutes.
Mix in the cheese and reheat without boiling until it has melted.
Serve hot with crisp toast or croutons.
