Quick Cassoulet Recipe
This is how I show my love to my near and dear ones, yes by preparing their favorite Quick Cassoulet using this recipe. This French recipe of Quick Cassoulet is enjoyed the world over. Ingredients
1 cup chopped carrot
1/2 cup chopped onion
1/2 cup canned no-salt-added beef broth, undiluted
2 (15.8-ounce) cans black-eyed peas, rinsed and drained
1 (14 1/2-ounce) can no-salt-added whole tomatoes, undrained and chopped
1 1/2 cups chopped cooked lean pork
1 cup chopped cooked chicken breast
1/4 cup dry vermouth
1 teaspoon dried whole thyme
1/2 teaspoon garlic powder
1/2 teaspoon ground allspice
1/4 teaspoon pepper
3 tablespoons toasted fine, dry breadcrumbs
2 tablespoons chopped fresh parsley
Directions
Place carrot, onion, and broth in a 3-quart casserole.
Cover with heavy-duty plastic wrap, and vent.
Microwave at HIGH 8 minutes.
Add peas and next 8 ingredients; stir well.
Cover with heavy-duty plastic wrap, and vent.
Microwave at MEDIUM HIGH (70% power) 13 to 15 minutes or until thoroughly heated, stirring after 7 minutes.
Sprinkle with breadcrumbs and parsley.
Cover with heavy-duty plastic wrap, and vent.
Microwave at HIGH 8 minutes.
