|Shortening||1 Tablespoon, melted|

Stir to blend thoroughly.
Stir remaining sugar and the salt into the hot milk.
Add lukewarm water to hot milk and cool to lukewarm.
Combine yeast and milk mixtures.
Add 3 cups of the flour, and beat smooth, add shortening, mix well.
Add remaining flour, stirring to make a stiff dough.
Turn out onto a lightly floured board, using 2 tablespoons of flour for kneading.
Cover dough with bowl, let rest 10 minutes before kneading.
Knead for 10 minutes.
Divide into 2 portions, round up quickly, cover with a bowl, and let rest for 20 minutes on board.
Shape into loaves place in greased pans (4 1/2 x 8 1/4 x 2 3/4 inches).
Grease tops of loaves lightly, place in an unlighted oven.
Place a deep pan containing boiling water on same rack of the oven.
Turn regulator to 400° F.
(moderately hot) and turn on heat for 1 minute, keeping door closed.
Turn off heat and let loaves remain in closed oven for 1 hour.
Remove pan of water and light oven.
Bake loaves at 400° F.
for 20 minutes, then reduce heat to moderate (375° F.) and continue to bake for about 30 to 35 minutes (or until done).
Remove from pans and place on a rack to cool, away from drafts and uncovered.
Makes 2 loaves.
