3/4 to 1 lb. dressed pike fillets
 
Salt and pepper
 
Flour or Bisquick
 
1 tbsp. butter, melted

Directions

Heat oven to 500° (very hot).
Season fish with salt and pepper.
Dip in flour or Bisquick.
Place fish in lightly greased baking pan.
Drizzle with butter.
Sprinkle with paprika, if desired.
Bake 10 to 15 min., or until done.
Serve immediately, garnished with tomato and lemon wedges.
