Quick And Easy Fried Rice Recipe
Ingredients
4 slices bacon, diced
8 eggs
Salad oil
6 cups cold cooked rice
Salt
1 green onion, chopped
Directions
1. In small saucepan over medium-low heat, cook bacon until browned; with slotted spoon, remove to paper towels to drain. Meanwhile, in bowl, beat eggs.
2. In 12-inch skillet over medium heat, in 3 tablespoons hot salad oil, gently stir rice until well coated with oil; push around side of skillet, leaving space in center.
3. In center of skillet, add 1 tablespoon salad oil; heat until hot; pour in eggs. Cook, stirring only the eggs quickly and constantly, until eggs are set and about the size of peas. Then gently stir rice and eggs to mix and add salt to taste; sprinkle with cooked bacon and green onion.
