 Virginia ham1 Cup (16 tbs), diced
 Light cream2 Cup (32 tbs)
 White pepper1⁄4 Teaspoon
 Parmesan cheese3⁄4 Cup (12 tbs), grated
 Nutmeg1⁄4 Teaspoon
 Chives1 Tablespoon, chopped
 Citrus1 Tablespoon (For Garnish)
 Swiss cheese1 1⁄2 Cup (24 tbs), grated

Preheat the oven to 400° F.
Lightly oil a 10 inch quiche dish or pie pan.
Roll out the Pastry 1/8 inch thick on a lightly floured board or pastry cloth.
Press it firmly into the prepared dish.
Prick the dough well with a fork.
Bake at 400° F for 5 minutes.
Reduce the heat to 350° F.
Combine the virginia ham, Parmesan, and chives.
Cover the bottom of the shell with the Swiss cheese.
Spread the ham mixture over the cheese.
Beat the eggs, cream, white pepper, and nutmeg together until well blended.
Taste for seasoning.
Depending on the saltiness of the virginia ham, it may be necessary to add a little salt.
Pour the mixture into the shell.
Bake at 350° F for 40 minutes or until done.
Let the quiche stand for 10 minutes before cutting it.
Garnish with Citrus Fruit Garnish.
