Quiche Lorraine Recipe

Ingredients
Pastry:
1 T ice water
1/2 c corn germ oil
2 egg yolks
2 c wholewheat pastry flour
Filling:
6 slices bacon (optional)
2 c heavy cream
1/2 c powdered milk
3 eggs
1/4 t sea salt
Pinch Nutmeg
1 t chopped chives
1/2 c natural Swiss cheese, grated
Butter
Directions
Make pastry dough by blending water, oil, yolks, and flour, adding a small amount of milk if necessary to make a stiff dough.
Press into pie plate.
Chill 1 hour.
Render bacon.
Combine eggs, cream, powdered milk, salt, and nutmeg in blender.
Spread a little butter over the bottom of the pastry shell and then sprinkle first with crumbled bacon and then with cheese.
Pour egg-milk mixture on top.
Bake in a 400° oven for 15 minutes; reduce heat to 300° and bake 15 minutes more.
Let cool slightly, but serve warm.
In place of bacon and cheese use pureed vegetables, especially spinach and carrots with a dash of curry powder.
For a Spanish style quiche, add sauteed green peppers, onions and pimentos and garnish with broiled tomatoes or serve a plain quiche without bacon or cheese and for enhancement, top with your favorite sauce.
