Queen Of Puddings Recipe

Ingredients
55 grams (2 oz.) fresh white bread crumbs
2 teacups milk
25 grams (1 oz.) butter
2 large eggs
2 tablespoons sugar (approx.), rind of 1 lemon
3 tablespoons powdered sugar for the eggs
a few glace cherries and sultanas
a little jam for spreading
Directions
1. Grate the lemon rind and chop the cherries and sultanas.
2. Bring the milk and butter to boil and pour over the bread crumbs.
3. Add the sugar, grated lemon rind and the chopped cherries and sultanas.
4. Separate the eggs.
5. Beat the egg-yolks and add to the bread mixture. Put the mixture in a greased baking dish. Leave for about 30 minutes.
6. Bake in a moderate oven at 350°F. until set. This will take about 30 minutes.
7. Beat the egg-whites until stiff. Beat in half the powdered sugar gradually and fold in the rest. This is a meringue mixture.
8. Spread the jam thinly over the pudding.
9. Pile the meringue mixture on top. Dredge with a little powdered sugar.
10. Bake in a moderate oven at 350°F. until light brown. Serve hot.
