Queen Elizabeth Cake Recipe
The queen elizabeth cake is a date and nut cake flavored with vanilla and topped with a sugar and butter coconut topping. Baked and then topped, the queen elizabeth cake is all set to go after the topping is broiled under a broiler.
Ingredients
1 cup boiling water
1 tsp soda
1 cup dates, chopped
1/4 cup shortening
1 egg
1 tsp vanilla
1 cup white sugar
1/2 cup fresh walnuts, chopped (optional)
1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
Topping:
5 Tbsp brown sugar
2 Tbsp heavy cream
3 Tbsp butter
1 cup coconut (I use a little more)
Directions
Pour boiling water over dates and soda.
Let stand.
Cream shortening and white sugar.
Add egg, vanilla, and walnuts (if using).
Add date mixture, as well as flour, baking powder and salt.
Mix well.
Bake at 350°F (325°F if glass pan) in 8x8 inch greased baking pan for 45 minutes or until toothpick comes out clean.
Topping: Mix all 4 ingredients together.
Spread over top of cake and place under broiler until golden for a few minutes, watching constantly
